Peppermint Bark and other fun things

~~Lots of fun things to share today!
First, the Peppermint Bark. I will say this right now; this stuff is evil! Guaranteed to sabotage any diet and knock over any willpower. Consider yourself warned!

Peppermint Bark
*1 package (12 oz) dark chocolate chips
*1 (16 oz) package white almond bark (found in the baking aisle)
*10 or so candy canes
*1 tsp peppermint extract

~~This really isn't a recipe so much as it's a mix-together. It's fast and easy to make and looks very festive in a pretty tin. I like to keep the ingredients on hand for any last minute parties or gifts.
~~First, line a small rimmed cookie sheet with aluminum foil and spray with non-stick spray. I have a small round pan that I like to use.
~~Melt the chocolate chips in the microwave for about 2 minutes (stirring every 30 seconds.)
~~Pour the melted chocolate on the tin and place in the freezer.
~~Place the unwrapped candy canes in a ziplock bag and crush into small pieces.
~~Melt the almond bark in the microwave until smooth (once again stirring every 30 seconds.)
~~Add the crushed candy canes and peppermint extract and stir until well blended.
~~Pour the mixture onto the dark chocolate and carefully spread.
~~Place the candy back in the freezer until firm.
~~Remove from freezer and use a knife to break into pieces.
~~Store the candy in a cool, dry place.
~~Enjoy!

Love, love, LOVE the new look! Makes me want to cuddle up and make some Christmas decorations. The kids are gonna love the peppermint bark - we make fudge last night and now they have the baking bug!

mmmm... this recipe certainly looks good! and I had to laugh about the extra leg padding episode with Savannah in the last post, only because I'm grooming some extra myself and kicking myself for not being more diligent with my jogs in the cold weather too. Well, I'll just be off to Walmart to buy a new warm and toasty jog suit, 'specially after I've made note of this recipe :)
My gosh girl, what we put ourselves thru these Holiday seasons!!!! lol
