White Chocolate-Cashew Pretzel Bars

~~We woke up this morning to a little taste of winter. It is cold and wet and has me making a mental note to do inventory on socks, gloves, hats, etc. I want to be prepared when the cold finally comes in to stay.
~~Cold weather gets me thinking about the upcoming Holiday season. I want to share a link to a really awesome website Organized Christmas.com The Christmas Countdown is a six-week organizing plan that started yesterday. Each week is focused on a different theme: organizing, gifts, decorating, cooking, etc. There are lots of printables and fun recipes and ideas. If you follow the plan you're supposed to be done and ready for Christmas by December 1st. I've never actually followed the plan to a T, but it has been a great help every year. I would love to actually have a stress-free Christmas where I could just enjoy special times with my family. It seems like every year I get so overwhelmed with everything there is to do.
~~Saturday we had a get-together with my husband's family and Dustin asked me to make these layered bars. They were a big hit so I thought I'd share the recipe. I will warn you right now: these things are evil!! They are absolutely irresistable! They look fancy but aren't hard at all to put together.

White Chocolate-Cashew Pretzel Bars

*1 roll (16.5 oz) refrigerated sugar cookies
*1 bag (12 oz) white chocolate chunks or chips
*1 cup coarsely chopped pretzel sticks or twists
*1 -1/2 Cups semisweet chocolate chips
*1/4 Cup peanut butter
*1 Cup chopped cashews

1. Heat oven to 350 degrees. Spray 13" x 9" pan with cooking spray. Break up cookie dough into pan. With floured fingers, press dough evenly into bottom to form crust. Sprinkle 1 cup of the white chocolate chips and the pretzels over dough: press lightly into dough.
2. Bake 16 to 20 minutes or until light golden brown. Cool completely; about 30 minutes.
3. In small microwavable bowl, place 1/4 cup of the white chocolate chips; set aside. In large microwavable bowl, microwave the semisweet chocolate chips, and remaining white chocolate chips on High 2 minutes, stirring every 30 seconds until melted and smooth. If necessary, microwave 30 seconds longer. Stir in peanut butter and cashews. Spread mixture evenly over cooled baked crust. Refrigerate 15 minutes to set chocolate.
4. Microwave reserved 1/4 cup white chocolate chunks on High 30 seconds: stir until melted and smooth. Drizzle over bars. Let stand until set, about 10 minutes. Cut into bars.

I just found a comment you posted on my blog way back in May, I think it was! I'm sorry I never replied; I usually get a google alert when somebody comments, but maybe I hadn't set that up yet...
Anyway, it's great to hear from another mom/artist hybrid. And you're training for a marathon too!
Awesome. But how do you get time to bake?! I know, it's a balance. And some days our creativity comes out in the form of chocolate brownies, or whatever!
